Making shawarma chicken is a straightforward process that involves marinating the chicken in a blend of Middle Eastern spices and then cooking it. Here’s a simple recipe to make delicious shawarma chicken at home:
Ingredients:
- 2 pounds boneless, skinless chicken thighs
- 4 cloves garlic, minced
- 4 tablespoons lemon juice
- 4 tablespoons extra virgin olive oil
- 2 teaspoons ground cumin
- 2 teaspoons paprika (smoked if possible)
- 1 teaspoon turmeric
- ½ teaspoon ground cinnamon
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 large onion, sliced (optional)
- Tahini or tzatziki sauce for serving
- Pita bread, arugula, pickles, and olives for assembly
Instructions:
- Prepare the Marinade:
- In a large bowl or a gallon-sized Ziploc bag, combine olive oil, lemon juice, garlic, cumin, paprika, turmeric, cinnamon, salt, and pepper. Whisk or mix well to combine.
- Marinate the Chicken:
- Add the chicken thighs to the marinade. If using a bowl, cover it with plastic wrap. If using a Ziploc bag, seal it and massage the bag to coat the chicken evenly.
- Refrigerate for at least 1 hour or overnight.
- Cook the Chicken:
- Oven Method: Preheat the oven to 425°F (220°C). Remove the chicken from the marinade, letting any excess liquid drip off. Place the chicken on a lightly oiled baking sheet, spreading it out in a single layer. If desired, add sliced onions to the baking sheet. Bake for about 30 minutes, or until the chicken is cooked through and slightly browned. For a crisper exterior, broil for an additional 1-2 minutes.
- Grill Method: Preheat the grill to medium-high heat. Remove the chicken from the marinade and brush with a little oil. Grill for about 10 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C).
- Rest and Slice:
- Once cooked, let the chicken rest for a few minutes before slicing it into thin strips.
- Assemble the Shawarma:
- Warm pita bread by wrapping it in foil and heating it in the oven for a few minutes.
- Spread a layer of tahini or tzatziki sauce on the pita.
- Add sliced chicken, arugula, pickles, and olives.
- Serve immediately and enjoy!
Tips:
- Marinating Time: The longer you marinate, the more flavorful the chicken will be.
- Spice Adjustments: Feel free to adjust the amount of spices according to your taste preferences.
- Serving Options: You can also serve the chicken over rice or in a salad bowl with your favorite toppings.
